This is not step by step but it's a picture and a recipe


Ryan's mushroom soup



Ingredients:

-Mushroom-lots (2lbs aprox)-various types (Portobello, brown + white, oyster, enoki, button)
-Margarine or butter 4T
-1 T olive oil
-1/4 c Red wine
-1 t marjoram
-1 t sage
-1 t teragon
-bay leaves
-7 cloves garlic
-2 med onions
-2 stalks celery
-1.5 L broth of your choice
-3 T flour
-2 cups Soy milk
-1 T porcini mushroom powder + 1 T truffle oil (optional)

(note: if you don't wanna be a fatty don't make the roux. it is a hellofagood soup before
that was added and it will cut out 3/4 of the margarine/butter. It adds a really great creaminess that puts it over the edge but next time I think i'll vote to skip it)


-Brown 1 T of butter or marg. in a pot, add the onions and celery (add truffle oil here if desired)
-Once soft add the mushrooms (except the buttons) + garlic + herbs (add porcini mushroom powder)
-Once mushrooms are brown and things start to stick de-glaze with red wine
-Use a stick blender if you have one (pick out bay leaves first!)
-Add the broth and bring to a boil cover, reduce heat to med and cook for 5 mins

-In a seperate pan sautee the button mushrooms with garlic and some red wine

Make the roux:

-In a small saucepan over med heat melt 3 T butter then stir in flour
-Add milk stir until thick and bubbly and add to soup
*tip: add the roux through a gravy/sauce strainer to get any lumps out


-Season with Salt and pepper, enjoy!

yum. i can't wait for it to get chilly again. i love soup. the meal up there^ soup, bread, and wine, is my favorite thing ever. :)

that looks sooo good. awesome to see a post again, i've tried a lot of your recipes and they've all turned out very tasty
